The Seared Scallops are dusted with Chef’s Spice Blend that sits over the Brown Butter Roasted Spaghetti Squash, Parsnip Puree garnished with Sweet Potato Ribbons, and the whole dish is finished with Orange Miso Emulsion and Grand Marnier Saffron Gastric.
Whim Cotton Candy is the premier craft cotton candy experience of the Florida Panhandle. The Foo Foo Berry Swirl is a combination of blackberry, strawberry, raspberry, and lemon swirled into a delicious cotton candy and finished with glitter stars.
The Union Public House is a Crafty, Southern Pub serving downtown Pensacola a relaxed atmosphere and high-quality food & drink menu. The inspiration behind this year’s Foo Foo dish is the Caribbean with a lot of fall flavors and fruits. It’s a banana based cake that has pineapple, allspice, and cinnamon.
Opened in 1966, Sir Richard’s is a vintage English pub located in East Pensacola Heights. Complete with pool tables, darts, karaoke, and traditional cocktails. They created a refreshing cocktail with a little bit of a twist, made with Astral Tequila, fresh ingredients, and ginger beer
Odd Colony Brewing and Alga Beer Co. join forces to collaborate on the 2024 Foo Foo Brew. They are taking on lager, which is a big focus of both of their projects, and work with ingredients that are in season. This year’s brew is a pilsner made with wet hops.
B Side is an outdoor bar and courtyard next to Vinyl Music Hall in downtown Pensacola. The Foo Foo Crush cocktail is made with Absolut Vanilla and Absolut Mandarin Vodka, orange liquor fresh squeezed orange juice, and a splash of soda and will be available during Foo Foo Fest this year.
The Burrow is a unique and creative concept brought to you by Odd Colony Brewing Co, located in East Hill. Executive Chef Amy Potmesil created a Crab and Taleggio Tart with a local apple and fennel salad. She was looking for the perfect sweet spot to incorporate seafood with fall produce from local farms.
Big Jerk Soda Co. is a carbonated craft beverage brand based in Pensacola, FL. Their sodas are made from real fruit juice ingredients or all natural extracts with no artificial colors, dyes, preservatives or caffeine. They have created a specialty soda based on the 2024 Foo Foo Fest Blue Trees Exhibit.
Atlas Oyster House – located just steps away from its sister restaurant, The Fish House, on Pensacola Bay – offers an elevated waterfront dining experience. During Foo Foo Fest, stop by to try their Fried Oyster Po-boy with smoked tomato tarter sauce, house-made mayo and pickles, served with a special seasoned fry.
Jitterbug Beverage Co. is one of the only gluten-free kitchens in Pensacola. For this year’s Foo Foo Fest, Jitterbug has created the Kiki Churro Foo Foo Gluten-Free Waffle Sticks, served with an Ecuadorian cacao dipping sauce, whipped Chevre cheese, and miso-apple caramel.
A local favorite, Carmen’s Lunch Bar & Tapas is serving up the FooFana Cubana Sandwich – featuring slow-roasted pork, Boar’s Head sweet slice ham, imported Swiss cheese, and yellow mustard and pickle relish on a toasted ciabatta roll.
One of northwest Florida’s first vegan restaurants, guests are invited to try the Foo Foo Pho from Chef Casey Cook, featuring onion, garlic, ginger, star anise, cloves, cinnamon, cardamom, coriander, rice vinegar, potato, carrot, jalapeno, enoki mushroom, rice vermicelli, Thai basil, mint, and pea tendrils.
This November, guests are invited to have a “hole” lot of fun with a Foo Foo Matcha Monster Doughnut at Pensacola’s downtown craft doughnut and coffee shop. The Matcha Monster features matcha, cinnamon maple glaze filled with raspberry jelly, and is finished with whipped topping, crushed pistachios, and a raspberry drizzle.

A must-try staple on Pensacola’s ale trail, ALGA Beer Company has brewed a limited-time Foo Foo Anniversary Ale – a grapefruit hazy IPA.
